Sake Mirai was created in 1991 by Takagi Shuzo, the brewer of Jyuyondai in Yamagata, after 18 years of trials. Its parent varieties are Yamasake No. 4 and Miyama Nishiki. While some might compare Sake Mirai to Gohyakumangoku or Miyama Nishiki, it distinguishes itself by having fewer off-flavors (zatsumi). Sake Mirai is exceptionally clean, transparent, and capable of creating a sense of depth. In light of these qualities, Houou Biden chose to employ the Kimoto brewing method and allow the sake to mature slightly. Houou Biden believes that this approach unlocks the full potential of 'Sake Mirai.' Houou Biden usually releases sake 1-2 months after the production, but for Sake Mirai, they let it sit for about 6 months. It matures well over the years. The flavor is characterized by a refreshing aroma and texture that evoke fresh greenery and a creamy, gentle aftertaste.
